Ingredients

  1. 1/2 cup skim milk
  2. 1 tablespoon vinegar
  3. 2 tablespoons canola oil
  4. 1 teaspoon vanilla
  5. 1 egg
  6. 1/3 cup packed brown sugar
  7. 1 cup whole-wheat pastry flour
  8. 1/2 teaspoon baking soda
  9. 1/2 teaspoon ground cinnamon
  10. 1/8 teaspoon salt
  11. 1 cup frozen mixed berries, such as blueberries, raspberries and blackberries (do not thaw)
  12. 1/4 cup low-fat granola, slightly crushed

Heat oven to 350 F. Spray an 8-inch round cake pan with cooking spray
